Ok, so this is technically not a dessert recipe, but these apple muffins are seriously delicious. I've made them twice already! It's the perfect thing to pop in the oven and warm up the kitchen on a cold morning. I can't be the only one with insulation issues.
This recipe is from Jenna's Everything Blog. The only changes I made to the recipe was adding clove instead of all spice and only 1 TB of milk for the 2nd batch. I did not try it with applesauce since we didn't have any. If you do decrease the milk, make sure to shape the mix a bit in the muffin tins, if you care about the muffins looking pretty. It will be thick and doughy and won't bake as pretty. But I enjoyed the crisper texture it gave the muffins.
Either way, make the muffins! You'll be happy that you did!
